Loaded Potato soup

 Hi everyone! For today’s post I decide to post a very delicious, loaded potato soup in honor of the first day of fall being this Saturday. This soup is amazing to have when it is chilly outside, providing you with warmth. This soup is super creamy and cheesy, and all the flavors work so well together. This recipe serves around 15 people, and it takes about 40 minutes to make. It is perfect for those get togethers that you have with friends or family. It is also perfect for leftovers and saving the rest of it in your freezer for another meal later. 

What you are going to need:

-       12 oz of bacon 

-       1 ½ cups of chopped onion 

-       6 cups or 32 oz of chicken broth

-       2lbs of potatoes, peeled and chopped into cubes.

-       2/3 cups of butter or 1 whole stick of butter and 3tbsp 

-       ¾ cup of all-purpose flour 

-       4 cups of milk 

-       1 tsp of salt 

-       1 tsp of ground pepper

-       8 oz of sour cream

-       2 ½ cups of sharp cheddar cheese 

-       ¾ cup of sliced green onions

How to make: 

1.     In a skillet or a frying pan, cook your bacon on medium heat for around 6 to 7 minutes or until crispy. If you do not want to cook it on the stove, you can always cook your bacon in the microwave and for that you would need to have a microwave safe plate, paper towels and your bacon. On your plate lay down around 5 paper towels and then set your bacon on top of your paper towels. Then from there you want to lay down a thin layer of paper towels on top of your bacon. Pop it in the microwave and set the time to how many pieces of bacon you have. So, say you have 3 pieces you want to cook the bacon for 3 to 4 minutes in the microwave. Once your bacon is done make sure you reserve 2 tbsp of drippings, then you are going to chop the bacon up into small pieces. 

2.     Next you want to chop up your onion into small pieces and then with the drippings you saved cook your onions in it, over medium heat for 6ish minutes or until the onion is somewhat tender. 

3.     Then in a big pot you want to combine your onion, broth, and chopped up potatoes. Cook on high until it is boiling once it starts to boil reduce heat and cook for 10 minutes or until the potatoes are super tender. 

4.     In a skillet on low heat melt your butter and once it is melted add your flour and whisk until smooth. Once smooth continually stir for one minute and then gradually add in your 2 cups of milk.  Then pour your milk, butter, and flour mixture into your large pot with your onions, broth, and potatoes. Next you want to add your last 2 cups of milk, salt, and pepper. Cook on medium heat, making sure to stir with a whisk continuously, until your mixture is bubbly and thick.

5.     Once the mixture is thick and bubbly add in half of the bacon, sour cream, 2 cups of the cheese, and a ½ cup of the green onions. Cook this until it is heated all the way through, and the cheese is melted. Then take it off the heat and serve. To each serving make sure you top it with the remaining bacon, cheese (1/2 cup), and ¼ cup of green onions. Enjoy!
