Italian penicillin
Hi everyone and welcome back! For todays post I decide to do a meal that is both warm and comforting during this cold weather. It also is perfect for people who are feeling under the weather, especially with flu season right around the corner! This meal is super easy and quick to make, perfect for people who are super busy and need to make something quick. The meal that we will be making today is called Pastina soup or Italian penicillin.
· 6 cups vegetable broth
· 1 small yellow onion
· 4 cloves garlic
· 2 stalks celery
· 2 large carrots
· ½ pound of pastina
· 2 ounces fresh Parmigiano-Reggiano (optional for garnish)
· ½ tsp of black pepper (also optional for garnish)

How to make:
1. Wash all your veggies. Peel your onion, garlic, and carrots. Once done cut in half your carrots, celery, and onion.
2. Then in a large pot put in your vegetable broth and bring to a boil. Once at a boil put in the vegetables and cover the pot and let it boil for 15 minutes.
3. Once the vegetables have been boiling for 15 minutes remove them from the pot and put them into a blender, along with ¼ cup of the broth the vegetables were in. Blend until smooth and then put the puree vegetables back into the boiling broth. Stir to combine.

After you combine the puree and the broth you are going to add in your pastina. Once the pastina is added cover your pot and boil for 8 minutes, making sure to stir halfway in between. 6. Once the pastina is done cooking take it off the heat and serve it hot with freshly grated Parmigiano-Reggiano and black pepper on top (optional). Enjoy!
